Recently, I was fortunate to have the opportunity to compete in Australia’s first ‘Day Comp’, at BBQ & Beats 2017 at the NightQuarter in Helensvale. It was a killer comp against many of the best in the game. I’m proud to say I had the cook of my life at this comp and am very proud of my results, against some of the biggest teams on the circuit. Well folks, this is exciting. Just before Episode 10 launched, where I interviewed Brett Connell from the Flamin Mongrels about Sponsorship, I went up to the Sunshine Coast to judge at the MooloolaBaBQ Festival. While I was there I met a great guy named Julian D’Souza who told me about a festival he was putting together called the BBQ & Beer Roadshow 2017. We chatted back and forth and two days later I got an email asking if I’d like to host the live Q&A session that he had on the schedule. I just couldn’t let an opportunity like that slip by and so of course, I said yes. Continue reading BBQ & Beer Roadshow 2017

Some of my best memories growing up are from when I was in the local Venturer’s Group. We’d go hiking, camping, abseiling, all sorts of fun things. My best friend at school had gotten me into it and whenever we went camping he’d always break out the ham steaks for us to cook over the fire. To be honest, I didn’t think much of them at the time, but while putting together a recipe for glazed hams for Christmas, I was hit with a bolt of inspiration: Pineapple and Maple Glazed Ham Steak Burgers! My son woke me up early on Saturday morning and said “Daddy Daddy, let’s make pancakes” so I got him dressed, got myself dressed, bundled him into the car and went to the shop and got some Buttermilk then came back and mixed up my favourite pancake mix. Then he said “Daddy, pancakes on the BBQ” and I thought, “Sure, why not? BBQ Breakfast it is.” So I stood outside in the morning sun, which on the Gold Coast in Summer can be 30 degrees by 8am, and brought in my beautiful pancakes. Which my son then refused to eat…. Grrrr…. Anyway, here’s how to do it…
Do you ever get those ‘Oh’ moments? When you thought something was really difficult and then something suddenly clicked and you felt a little ridiculous? I was like that with fish. I had always been too intimidated to try cooking seafood on the BBQ and then my wife bought me a lesson at a BBQ school. I went, learned, and said ‘Oh’. A lot. I’ve always been a big fan of seafood and have always loved a big bowl of prawns at Christmas. I’ve also loved pineapple juice, and pancakes with maple syrup. Oh and bacon… So I was thinking why not put them all together?
This is dead set simple but one of the tastiest things you’ll ever cook. The only ‘trick’ is the glaze, but if you can melt some butter and stir with a spoon, you can make a glaze. Continue reading Maple & Pineapple Glazed Seafood Kebobs
